Homemade Ketchup

Homemade Ketchup
Ingredients:
36 green tomatoes, thinly sliced
6 large onions, sliced
¾C coarse salt
1 entire celery stalk, sliced
4C white vinegar
4C sugar
Pickling spices (in a bag of cheesecloth)
Preparation:
Place the tomatoes and onions in a large saucepan with the coarse salt. Leave to drain overnight.
The next day, drain well. In the large saucepan, place the tomatoes and onions, then add the celery, vinegar, sugar, and spices. Bring to a boil, reduce to medium heat and cook for about 2 hours, uncovered, stirring occasionally.
Fruit Ketchup

Ingredients:
12 red tomatoes, scalded and skins removed
5 pears, peeled
6 apples, peeled
5 peaches, peeled
8 onions, peeled
3 green peppers
3C vinegar
5C sugar
4 tsp salt
1 tbsp pickling spices (in a cheesecloth bag)
Preparation: Cut all the fruits and vegetables into equal-sized pieces. Put the pieces in a large saucepan. Add the sugar, salt and vinegar. Mix well. Add the bag of pickling spices. Bring to a boil, then reduce heat and simmer, covered, for about an hour, stirring occasionally.
